These pumpkin bars with cream cheese frosting are very moist with just enough pumpkin flavor. For added crunch, top with chopped walnuts.



  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 1 can pumpkin (15 oz. can)
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • dash salt
  • 1 teaspoon cinnamon


  • 3/4 sticks butter
  • 1 teaspoon vanilla
  • 6oz whipped, plain cream cheese
  • 3 cups powdered sugar

Frosting (Optional)

  • 3/4 cups chopped walnuts


Frosting recipe makes a large batch. Feel free to halve the recipe for a thin layer. 


1. Preheat oven to 350 degrees
2. Mix together all ingredients for bars
3. Pour mixture into ungreased, large cookie sheet
4. Bake for 20 minutes on middle rack; check center for doneness
5. Mix all frosting ingredients together in large bowl
6. Spread frosting over COOLED bars
7. Top with chopped walnuts if desired
