Chicken Noodle Soup

  • 3/4 Large onion (chopped)
  • 3 celery stocks (chopped)
  • 1 cup carrots (chopped)
  • 16oz frozen noodles (Reames noodles work great.)
  • 2 boxes Low sodium chicken stock (Use two 32 oz. boxes)
  • 2-3 Chicken breasts (cooked/shredded (can substitute with a rotisserie chicken))
  • 1 teaspoon pepper (or to taste)


You may add another bag of noodles if you prefer a heartier soup or need it to go further.


1. Bring chicken stock to a boil
2. Add chopped onion, celery and carrots to stock
3. Once veggies start to soften, add cooked/shredded chicken and frozen noodles
4. Let simmer for 10-15 minutes for flavors to blend
5. Add black pepper to taste
6. If needed, you may add extra water and a bouillon cube for more flavor
7. Reduce heat to cool a bit and serve.
8. Enjoy!
